🍞 Tevah 100% Fresh-Milled Bread

Use for bread, buns, or rolls — this recipe is a great whole-wheat base dough that’s soft, hearty, and rich in flavour.


Ingredients

  • 12 cups (≈ 1800 g) lightly sifted stone-ground bread flour
  • 5 cups warm water
  • 2 ½ Tbsp yeast
  • ¼ cup brown sugar
  • ¼ cup oil
  • 1 Tbsp salt
  • 3 eggs

Instructions

  1. Bloom the Yeast
    In your mixing bowl, combine warm water, yeast, and brown sugar. Stir lightly and let sit for 5 minutes until bubbly. (You can autolyse some of the dough here. 6 cups flour to 3 cups water. Mix and let it rest for 30 minutes to a couple hours. This brings freshness, flavour and tenderness to the bread)
  2. Add Flour
    Add half of the flour (about 6 cups / 900 g) and mix on low speed until combined. If you did the autolyse method, add that to the yeast mixture instead and carry on. 
  3. Add Remaining Ingredients
    Add the salt, oil, and eggs.
    Then gradually add the remaining flour, one cup at a time.
    👉 If the dough is too sticky, continue adding small amounts of flour until it pulls away cleanly from the sides of the mixing bowl.
    The dough should be soft and pliable, but not wet or tacky.
  4. Knead the Dough
    Knead for about 5–10 minutes with a stand mixer on low-medium speed, or by hand, until the dough is smooth, elastic, and well-developed.
  5. First Rise
    Transfer the dough to a lightly oiled bowl. Cover and let rise until doubled in size — about 45 minutes to 1 hour.
  6. Shape Loaves
    Punch down the dough, divide into 4 loaves, shape, and place into greased pans.
  7. Second Rise
    Cover and let rise again until just above the pan rims — about 30–45 minutes.
  8. Bake
    Bake at 350°F (175°C) for 30–35 minutes, until golden and the internal temperature reads 190–195°F.
  9. Cool
    Remove from pans and cool on wire racks.
