The mini classics finish of beautifully around 16 weeks with the Toms averaging 20lbs and the Hens around 12lbs. The feed conversion is excellent for these birds and the meat to bone ratio superb, meaning you get far more meat which is what you want to be paying for, not bones.
The turkeys you can buy at the supermarket are usually Nicolas Large Whites or Broad Breasted Bronze - fast growing giant breeds that are bred for industrial food production but are harvested as babies for the ‘table trade’. The trouble with this is that baby giants grow large bones before they beef up, so their meat-to-bone ratio is poor. Lots of the weight you pay for is heavy bones that go to waste. Genetically smaller turkeys have better proportions when they are ‘table size‘. But most small heritage turkeys are slower growing and lack the broad breast trait.
The mini classic turkeys were bred to provide the perfect compromise: fast efficient growth to a nice table size, fine bone and broad breasts.
Small, stock and robust, the Mini's thrive in free-range conditions, and their meat is flavored by the diverse forage they eat. They love alfalfa and dandelion greens, chomp the young burdock and come to the kitchen door occasionally for handouts of fruit and veggies. In the kitchen you will find that these birds roast a little faster than the baby giant turkeys you are used to - the heat penetrates more evenly because of the smaller bones, so you don't have to worry about drying out the breast meat while getting the stuffing cooked. We have converted many friends that were 'anything but turkey' eaters to being fans of Mini turkeys.
