DESCRIPTION

There’s something magical about a weekend pancake tradition.

Growing up, Saturday mornings meant piling into the car, still sleepy, to go out for pancakes as a family. Golden stacks, syrupy plates, and the rare luxury of slowing down together — those moments became core memories stitched into my childhood. And my grandpa, teased us by called them flapjacks, like it was a special code. 

This mix is my way of passing that feeling forward.

Crafted from our fresh-milled organic wheat flours, warm cinnamon, natural sweetness, and a touch of dehydrated sourdough starter for depth of flavour, it brings that slow-morning comfort straight into your kitchen — whether you’re flipping pancakes or crisping waffles.

AVAILABLE SIZES

Makes 16–20 pancakes or a full waffle batch.

Perfect for families, brunch days, or batch freezing.

✨ 260 g Single-Use Bag

Makes 8–10 pancakes or a half waffle batch.

Ideal for quick breakfasts, gifting, and easy travel.

 

 

PANCAKE & WAFFLE GUIDE

FULL BAG — 520 g (≈2¼ cups mix)

Add:

  • 2 eggs
  • 2¼–2½ cups milk

Makes:

  • 16–20 pancakes
  • or full waffle batch

HALF BAG — 260 g (≈1⅛ cups mix)

Add:

  • 1 egg
  • 1¼ cups milk

Makes:

  • 8–10 pancakes
  • or half waffle batch

For Waffles (both sizes):

Use a little less milk for a thicker batter.

  • Full bag → 2–2¼ cups milk
  • Half bag → 1 cup milk

HOW TO MAKE

  1. Whisk eggs and milk according to the size you’re making (see chart above).
  2. Add pancake mix and stir gently until just combined.
  3. Let batter rest 3–5 minutes so the fresh-milled flour can fully hydrate.
  4. Adjust with more milk if needed — batter will naturally be thick and fluffy.
  5. Cook on a lightly greased pan over medium heat until bubbles form. Flip and cook to golden brown.
  6. For waffles, pour into a preheated waffle iron and cook until crisp and golden.

Organic fresh-milled wheat flours (hard red, hard white, Khorasan, red fife), organic cane sugar, aluminum-free baking soda, aluminum-free baking powder, sea salt, organic cinnamon, organic vanilla bean powder, organic fresh-milled dehydrated sourdough starter.

STORAGE

Fresh-milled flour is alive — store with care.

Keep in a cool, dry place. For best flavour and rise, use within 2–3 months.

Refrigeration or freezing extends freshness.

This mix is intentionally simple — no oils, no preservatives, and no stabilizers — because that’s the way my grandpa would have wanted his “flapjacks.”
