Hard White Flour
Our Hard White Flour is the lightest and most mild of our heritage grains — perfect for when you want a soft crumb and gentle flavour that lets your recipe shine. This is my favourite flour when I want 100% whole wheat sourdough. It makes amazing sourdough, cinnamon rolls and dinner rolls with a more mild flavour.
Fresh-milled on our traditional stone mill, this flour keeps all its natural nutrients, oils, and germ intact. We never add folic acid or enrichment — just pure, organic grain milled the old-fashioned way, full of wholesome goodness and life.
With a high protein content and soft golden colour, Hard White is a baker’s favourite for sourdough, sandwich loaves, and dinner rolls — especially when you want the flavour of your bread (and the sour!) to stand front and centre, without the deeper, nuttier notes of red wheat.
Because it’s fresh and alive, you may find it behaves a little differently than store-bought white flour — just give it time to absorb water and develop. The result is a loaf that’s soft, flavourful, and naturally nourishing.
Store in the fridge or freezer for long-term freshness, or in a cool, dry place for up to 2–3 months.
