Our lightly sifted flours offer the best of both worlds: all the goodness of whole grain with the silky, airy feel of a more refined flour. At roughly 85% extraction, we remove only the largest bran flakes while keeping the germ, oils, and fine bran intact.
The result? A soft, fluffy, beautifully workable flour that bakes like a dream — no white flour needed. These blends are still considered whole grain, but with a smoother texture, higher lift, and easier handling in everything from breads to pastries.
